Definitely don't exclude NYU from your list because you think you don't meet the criteria. Personally, there's no way I should have gotten into anything but a community college, given my high-school GPA (2.8, how's that for embarassing?), but NYU took other things (SAT scores, Essays) deeply into account, and I got in to Tisch. Work your butt off on your essay. Crazy things happen.

hard but not super hard.... i had a 3.4 in HS but very strong test scores- 1500 SAT(800 M 700 V), SAT2's- 800M, 800 BIO, 800 Chem, 780 Phys and 710 writing, did a decent amount of extracurricular stuff but nothing out of the ordinary and i thought my essay and rec's were ok. aim for a 3.6+ gpa, sat around 1350, and good extracurriculars to have a good chance at nyu even though it varies a lil bit depending on your major. make sure to apply ED if you think you're borderline.

Hm.. I applied and got into Stern, so I guess I could comment about that. What I did, I guess is what you should do for any college. Do fairly well on SATs - I got a 1530, but you very likely do not need anything that high to get in. I'd say selectivity definitely varies by school. Stern being probably the most competitive stats-wise, and Tisch being competitive in it's own artsy way. Write good essays, do well in school.. that type of stuff.
